More info

Compact 12 cm carbon steel frying pan for blinis, fritters and mini-pancakes; beeswax-protected, induction-ready, and naturally non-stick with seasoning. Preheat with a little oil.

The Mineral B 12 cm frying pan is made from heavy-gauge carbon steel with a protective beeswax finish that resists oxidation and speeds first seasoning. It’s sized for perfect blinis, fritters and mini-pancakes with crisp edges and tender centres.

Highlights

  • Crisp, even caramelization – Carbon steel delivers high heat for browned, delicate results.

  • Natural non-stick that improves with use – Seasoning builds gradually; enhanced from the first use.

  • Beeswax-protected – Protective film helps prevent rust and facilitates initial seasoning.

  • French-style riveted handle – Curved for balance and ergonomic control.

  • All cooktops – Compatible with gas, electric, ceramic and induction.

Usage:

  1. First use (seasoning prep): Rinse the pan under very hot water to soften any beeswax residue. Dry thoroughly.

  2. Build the first seasoning: Warm the pan over medium heat for 2–3 minutes. Add 1–2 tsp neutral, high-smoke-point oil (e.g., rapeseed/canola or sunflower). Swirl to coat in a thin film. Heat until a faint smoke appears, then remove from heat and let cool. Wipe excess. Repeat 1–2 times for a stronger base layer.

  3. Everyday cooking: Preheat the pan over medium heat for 1–2 minutes. Add a little oil, swirl, then add batter. For blinis (≈12 cm), cook until edges look set and the underside is golden; flip and finish.

  4. Heat guidance: Use medium to medium-high heat; avoid prolonged empty heating on maximum.

Care:

  1. After cooking: While the pan is warm, deglaze (add a splash of hot water), wipe with a soft brush or non-abrasive sponge.

  2. No detergents, no dishwasher. Rinse with warm water only.

  3. Dry completely: Return to low heat for 1–2 minutes until fully dry.

  4. Lightly oil: When cool enough to handle, wipe a thin film of oil over the cooking surface to protect the seasoning.

  5. Storage: Store in a dry place. If stacking, place a paper towel between pans.

  6. What to avoid: Metal scouring pads and aggressive scrubbers; soaking; long simmers of acidic foods (tomato, wine) until a robust seasoning has developed.
