The MIYABI KOYA 4000FCv2 Santoku 18 cm embodies the century-old tradition of Japanese artisan knife craftsmanship. Like all knives in the MIYABI 4000FC series, it impresses with a perfect balance of refined aesthetics and uncompromising sharpness.
Santoku translates as “knife of three virtues” and refers to its three main uses: cutting meat, fish, and vegetables. The 180 mm blade is honed on both sides, allowing for precise, effortless cutting in everyday kitchen tasks.
The blade is made from special FC61 steel and undergoes a twofold ice-hardening process (FRIODUR®), resulting in exceptional hardness, resilience, and long-lasting sharpness. Its fine Katana-edge cut, inspired by traditional Japanese swords, ensures outstanding edge retention and cutting performance. The sleek blade is finished with an engraved MIYABI logo.
The octagonal Pakka wood handle and matching bolster provide safe, comfortable handling and excellent control. A decorative mosaic pin adds an elegant finishing touch to the knife’s timeless design.
All MIYABI knives are manufactured in Seki, Japan, where German engineering expertise meets the finest East Asian craftsmanship.
