Turn the setting knob on the side of the machine to position 1. To do this, pull the knob outwards and turn it. Roll one piece of dough by turning the handle between the rollers. Repeat 6-8 times, folding the dough in between. If necessary, sprinkle a little flour on the dough so that it does not stick together. Then turn the setting knob to the next position and roll the dough through the rollers without folding it. Continue reducing the size of the gap between the rollers until you have reached the desired dough thickness. Remove the handle and place it in the opening next to the desired type of pasta cutter for either tagliatelli or fetuccini. Slowly turn the handle by rolling the dough through the cutter rolls. If the dough is too soft, the machine may have problems cutting it. In this case, sprinkle a little flour on the dough or let it stand for about ten minutes and then try again. Do not allow the paste to dry too much, even if the machine may have problems cutting it. When the pasta is ready, sprinkle a little flour on it and leave it to dry on a large surface before cooking.
Maintenance: After each use, clean the machine with a soft brush or cloth.
